These are the world's best cookies, no joke!

They're are perfectly crispy on the outside but there's this creamy, gooey caramel on the inside and it's topped with a thin layer of rich chocolate.

And if that's not enough, they're even refined-sugar-free and oil-free, so what are you waiting for?



-1/4 cup/75g maple syrup

-1/2 cup/125g peanut butter

-1 TSP vanilla extract

-a pinch of salt

-1/2 cup/85g oat flour (or any other flour)

-1 TSP baking powder


-2 TBSP peanut butter

-1/8 cup/35g maple syrup

-2 TBSP plant milk

-a pinch of salt


-30g melted vegan chocolate


1. Preheat the oven to 175 Celsius/350 Fahrenheit and give all the cookie ingredients to a mixing bowl.

2. Stir until well combined and shape the dough into 12 cookies.

3. Place them on a lined baking tray, press with your thumb a hollow in the center of each cookie and bake for 10-12 minutes.

4. Take them out of the oven and press another time with your thumb in the hollow you pressed before baking, when they're still warm.

5. Let them cool down completely and whisk up the caramel ingredients until gooey.

6. Fill about 1/2 TSP of the caramel in each hollow and cover it with about 1/2 TSP of the melted chocolate.

7. Refrigerate until set and enjoy!
