Everyone loves granola, right?
And everyone loves Christmas (we don't have to argue about this one).
So what happens if we take both things and put them together?
Alright, I might be exaggerating a little bit but this Christmas granola is honestly like a (vegan) Christmas party in your mouth. And should I tell you something?
Its even healthy!
Since I discovered how easy it actually is to make your one granola, that there are basically endless possibilities, that it is even tastier, healthier and of course cheaper I'll never go back again!
This time I thought about all those people out there who are allergic to nuts (I'm really sorry for you), so you can easily make this granola nut free by leaving out the walnuts and swapping coconut oil to rapeseed oil.
You can also prepare this for the Christmas brunch with your family or use it as a little Christmas gift to someone you love and to show that you really care about them.
for example, I've put some in my parents advent calendar which made my sister and I.
I personally love eating granola on top of nicecream or soy yogurt or with a bunch of fresh fruit and oat milk.
But hey I also don't mind eating it straight out of the jar!
Alright I know, you want that recipe, so here you go...
-1/4 cup coconut oil, melted
-50g maple syrup
-1 TBSP speculoos spice
-1 TSP vanilla extract
-A handful walnuts
-A handful choc chips
-A pinch of salt
-Preheat the oven to 175/3650 degrees.
-Mix all the ingredients up in a big bowl.
-Spread it in a baking tray and bake it for 20 minutes.
-Let it completely cool down and fill the granola in a jar.
