The combination of this healthy, sweet cookie dough with the gooey caramel and the rich chocolate is just heaven!
These squares taste like a really nasty treat but guess what...they're healthy!
So definitely make sure to give them a try!
RECIPE 9 SQUARES
-1 can/220g chickpeas
-1/4 cup/65g Peanut butter
-1/4 cup/75g maple syrup
-70g vanilla protein powder (I use nutrition plus)
-1 TSP vanilla extract
-1 cup/190g pitted dates
-2 TBSP peanut butter
-a pinch of salt
-100g melted vegan chocolate
1. Put all the ingredients for the cookie dough in a food processor and blend until it's a formable dough whilst soaking the dates in hot water for 10 minutes.
2. Press that dough in a lined baking dish and put the dates, the peanut butter and salt in the food processor.
3. Blend again until smooth and spread the caramel on the cookie dough.
4. Freeze for 1 hour, then spread the chocolate on top and refrigerate until set.
