These cookies are filled with a creamy, nutty caramel, they're slightly crispy on the outside but still nice soft on the inside.

And now the best part, these cookies are even healthy and high in protein!

But trust me, they'll taste even better than 'unhealthy' cookies.


Caramel filling:

-1/4 cup/60g peanut butter

-1/8 cup/30g maple syrup

-a pinch of salt


-1 can/240g black beans, drained & rinsed

-1/4 cup/60g peanut butter

-1/2 cup/110g maple syrup

-1 1/2 cups/165g spelt flour/all purpose flour (more if it's too sticky)

-2 TBSP cocoa powder

-1 1/2 TSP baking powder


1. First mix up the filling ingredients, place little droplets on a parchment paper and freeze them whilst preparing the cookies.

2. Add all the ingredients for the cookie dough to a food processor and process until it's a solid dough (if it's too sticky add more flour and knead it).

3. Preheat the oven to 180 Celsius/360 Fahrenheit, shape the cookie dough in balls and flatten them.

4. Place a frozen caramel droplet in the middle and fold it so that it has got a round ball shape again.

5. Bake the cookies for 15 minutes, let them cool down completely and enjoy!
