This is the perfect summer treat!
It's beautifully creamy, sweet 'n' slightly salty with crunchy cashew bites and an incredible, gooey caramel sauce.
And it's all healthy!
So, don't wait and let's get making some ice cream!
RECIPE 4 SERVINGS ICE CREAM:
-4 frozen bananas
-1 TSP vanilla extract
-1/3 cup/80ml plant milk
-1 TBSP cashew butter (or any other nut butter) Caramel:
-4 TBSP peanut butter
-1/4 cup maple syrup
-a pinch of salt
-2 TBSP plant milk
-1/3 cup/50g cup cashews
1. Give all the ice cream ingredients to a food processor and process until creamy. Fill the ice cream in a loaf pan and store in the freezer.
2. Prepare the caramel by stirring together the ingredients until gooey and drizzle it with the cashews over the ice cream (save some caramel sauce for later).
3. Carefully fold in the caramel sauce and cashew and freeze the ice cream for at least 2 hours.
4. Serve with more caramel and enjoy!
