SALTED CARAMEL CUSTARD


This pudding is taste wise out of this world, creamy, caramelly, pure perfection!

And the best, it's even healthy!


INGREDIENTS:

-1/2 cup/125ml coconut milk, full fat

-3 TBSP coconut sugar

-a pinch of salt

-2 TBSP corn starch

-3/4 cup/180ml plant milk

-1/2 cup/125ml coconut milk, full fat

-1 TSP vanilla extract

INSTRUCTIONS:

1. Add 1/2 cup of the coconut milk, the coconut sugar and the pinch of salt to a sauce pan and bring it to a light simmer while stirring.

2. Let it simmer and stir constantly for about 10 minutes until it has reduced down to kinda a like a caramel consistency.

3. Take it from the heat, stir in the cornstarch then add the remaining ingredients and mix it up.

4. Bring it to a simmer again and keep stirring for about 5 minutes until it has a pudding like consistency.

5. Fill the pudding into ramekins and refrigerate for 1 hour.

6. Enjoy!
