VEGAN BLONDIES


This is actually my favorite cake currently, soft fudge and soft, sweet and a little bit chocolatey by the chocolate chips!


INGREDIENTS:

-1 can chickpeas (rinsed and drained)

-1/3 cup/75g peanut butter

-3/4 cups/150g coconut sugar

-1/4 cup/40g spelt flour

-1 TBSP baking powder

-a pinch of salt

-1 TSP vanilla extract

-65g chocolate chips


INSTRUCTIONS:

1. Preheat your oven to175/350 degrees.

2. Add all ingredients except the chocolate chips to a food processor and blend until its a smooth but sticky batter.

3. Mix in the chocolate chips and fill it in a lined baking tray.

4. Bake for 35 minutes and let cool down.

5. Enjoy!
